Sugarcane vinegar are made from sugar cane juice and one of the most popular in the Philippines, particularly in the Ilocos Region where it is called “Sukang Iloko”. It ranges from dark yellow to golden brown in color, and has a mellow flavor, similar in some respects, to rice vinegar, though with a somewhat “fresher” taste. Contrary to expectation, containing no residual sugar, it is not sweeter than other vinegars. In the Philippines, it often is labeled as sukang maasim, although this is simply a generic term meaning “sour vinegar”.

Banayoyo
Banana is one of the most abundant fruit crops in the Province of Ilocos Sur. It is also one of the sources of income for farmers. Banayoyo has various ideas in turning banana into many processed products. Banana can be processed to make Banana Flour, Banana Pastilyas, Banana Puree, Dried Banana Blossoms, Banana Chips, and Pastilyas De Saging.

Bantay
Handloomwooven products or the abel is the traditional woven product of Vigan and the Ilocos region. The abel cloth is known for being a strong, colorful material. The fabric is so strong and beautiful that some families have them as heirlooms that last as long as their antique furnishings. The abel is made from yarns of cotton or sagut that are sourced from the many lands in northern Luzon that are dedicated to the growing of this plant. After the cotton is harvested, it is prepared into yarns and dyed. The different colored yarns are then arranged in a wooden handloom to create varied and unique designs. The process is intricate and labor-intensive. Weavers must master synchronizing the movements of their hands and feet to properly use the wooden handloom.

Burgos
Ballatinaw is an indigenous rice variety of Burgos,known for its excellent texture and aroma, unique reddish to blackish violet color and high eating quality.

Cabugao
Bamboo Craft. Bamboo grows in the parts of the Philippines.it is one of the most common materials used in house constructions in the provinces called "kubo" or "nipa hut" and now used in furniture making like sala set, outdoor tables and other materials.

Candon
Calamay, also spelled Calamay which means "sugar", is a sticky sweet delicacy that is popular in many regions of the Philippines. It is made of coconut milk, brown sugar, and ground glutinous rice. They can also be flavored with margarine, peanut butter, or vanilla. Kalamay can be eaten alone but is usually used as a sweetener for a number of Filipino desserts and beverages. Kalamay from Candon City, Ilocos Sur is sold wrapped in banana leaves or in coconut shells, though modern packaging uses polystyrene containers wrapped in cellophane. Candon City also celebrates a Kalamay Festival.

Caoayan
It is an old method of textile production, In which human resources thoroughly do the weaving without the use of any electricity. Lidlidda
Etag (igorot) or Innasin (iloko) – An Igorot food that is preserved small slab of meat (esp. pork) made through salt-treating, sun-drying; and/or smoking. Its color is partly dark brown with noticeable whitish yellow fat color. It comes from different varieties depending on the methods used. There are three methods of making etag which are discussed in the procedures. Its savory and salty taste made it a good seasoning ingredient for some foods.

Magsingal
Corn Husks Crafts are easy and fun to work with. Magsingal, Ilocos Sur has a good harvest of corn,and because of that they catched up an idea on producing the corn husks into crafts and it now serves as thier main product.

Nagbukel
Papaya has many applications in processed-food products and is available in a variety of forms, including purée, concentrate, powder, and dried or canned slices or chunks. Papaya purée is the major semiprocessed product that finds use in juices, nectars, fruit cocktails, jams and jellies. A number of low-moisture products, such as fruit leather, toffees, chunks, rolls and slices, have also been prepared from papaya purée. Besides its well-known use in food applications, the papaya has many traditional medicinal uses. Shamans in the Amazon used the seeds to cure parasites, which commonly affect native people.

Narvacan
Bagnet, to put it simply, is crispy fried pork belly, a cross between Chicharon and Lechon Kawali, where the lean meat is crispy but not dry and the pork skin with all the pork fat is fried to a crisp."Every household knows how to make bagnet. Quirino

Salcedo
The Rambutan is a medium-sized tropical tree in the family Sapindaceae. The fruit produced by the tree is also known as rambutan. In Salcedo, Ilocos Sur, rambutan trees grows infront of their backyards, hence, it makes them to be their product.

San Emilio
Tapey, or Igorot rice wine is traditionally served when a host invites someone to partake of his rice wine at his house. It is also drank in volumes during public festivities and celebrations. Tapey is nowadays available in stores around the Cordilleras and also a product of San Emilio, a cordillera Municipality in Ilocos Sur.

San Esteban
Nata de coco is a chewy, translucent, jelly-like foodstuff produced by the fermentation of coconut water, which gels through the production of microbial cellulose by Acetobacter xylinum. Originating in the Philippines, Nata de coco is most commonly sweetened as a candy or dessert, and can accompany many things including pickles, drinks, ice cream, puddings and fruit mixes. San Esteban has coconut gel or nata de coco made by the San Esteban Women's Association of San Esteban.

San Ildefonso
Basi wine is made by fermenting boiled, freshly extracted, sugar cane juice. The juice is then boiled in vats and stored in earthen jars. Once it has been cooled, flavorings made of ground glutinous rice and duhat (java plum) bark or other fruits or barks is added. A dried powdered starter is used to start the fermentation. The mixture is left for up to three months to ferment and up to one year to age. The final product is a light brown color and has a sweet and a sour flavor.

San Juan
Buri (Corypha elata) is the largest palm found in the Philippines. It is one of the most important palm, next to the coconut, in terms of economic and industrial importance. The buri leaf is the most versatile material used in handicraft industry. The Municipality of San Juan, Ilocos Sur is using it for making hats, boxes and other novelty items. It can be easily dyed and woven into many shapes.

San Vicente
Antique style Wooden Furniture industry are commonly found in San Vicente, Ilocos Sur. Quality products are being used locally as well as for market abroad. Black Smith Products are made up from wrought iron or steel by forging the metal, using tools to hammer, bend, and cut. The municiplaty os Santa is producing black smith products like gates, grilles, railings, light fixtures, tools, agricultural implements, and buneng (bolo knife).

Balikutsa is a native candy made out of hand-pulled, cooked sugarcane molasses. It melts in your mouth and is a perfect compliment to a good cup of coffee. The name Balikutsa is derived from the Ilocano word for snail. The pulled sugar is shaped into what resembles a snail.

UBE HALAYA- is a Filipino dessert made from boiled and mashed purple yam or they called it in the Philippines as “Ube” which is the main product of Sugpon. The texture is a little chewy and creamy, and the flavor of the Ube should stand out.

Suyo
Labtang, (scientific name: Anamirta acocculus), which grows abundantly in the hilly areas of Ilocos Region, particularly in the upland municipalities of Ilocos Sur, is being turned into exquisite handicrafts making it the main product of one municipality.
The local government of Suyo, an upland municipality or generally referred to as one of the "interior towns" of the province, chose labtang craft as its One Town-One Product (OTOP) due to the abundance of the plant in the area. The plant has many branches that are cut and carved into finished products such as baskets, flower vase, fruit tray, place mat and novelty items which find their way into not just local but also international markets. The labtang is durable, easy to process and can be harvested in three to five years time, making it at par with bamboo and rattan.

Tagudin
Extracted juice from the calamansi can be processed and bottled commercially as ready-to-drink Calamansi Juice.

Vigan City
The Vigan Longganisa is a small and plump native sausage, good for about two or three bites.
It is garlicky and has a yellowish color. Although it is eaten anytime, even as a bread filling, it is
traditional favored as breakfast fare together with fried eggs and steamed or fried rice. It is best dipped in Ilocos vinegar with plenty of chili, garlic and onions.
